October 10, 2019: Head baker to Hahnemanns Køkken Copenhagen
In 2018, I opened Hahnemanns Køkken, a food space in Sankt Kjelds Plads, Østerbro – a wonderful urban square in an area known for being Copenhagen’s new climate area.
I am now looking for head baker for my team at Hahnemanns Køkken. The perfect candidate would be an experienced baker, who is interested in Scandinavian baking culture, has great leadership skills and understand the importance of running an inclusive and open working environment. Additionally, the candidate should be interested in developing the bakery in collaboration with me, have experience in scaling a production and most importantly have a passion for baking.
100 % organic with Danish flour and grains
At Hahnemanns Køkken, we work 100% organic and the foundation of the food space is the bakery. I personally have a passion for bread, namely rye bread and all things around rye bread, but I also love cakes, especially the rustic homemade ones. So the bakery is born out of love of baking. Additionally, we have a small Cookery School, where I teach baking.
At the moment, the bakery produces a small selection of sourdough bread plus and some classic Danish recipes for the rye bread and other kind of “morgenbrød”. We also do a small selection of cakes and “småkager”. We work with flour and grains from Kornby Mølle and a few types of produce from Skærtoft Mølle.
We are now ready for stage 2, where we are branching out and making the bakery a bigger part of our business. Thus, we are redesigning the bakery, making some changes and are looking for the right person to take part in our journey.
